Chopped liver is one of my comfort foods. I had been a vegetarian purist for about 15 years when one family holiday I found myself sneaking tastes of chopped liver from my mother’s refrigerator. Needless to say, this recipe is an amazing alternative. It really mimics the flavor of chicken livers.

Ingredients
- 4 ounces butter or canola oil
- 3 very large onions chopped
- 1 lb green beans
- 3 hard boiled eggs
- 1 lb cashew or walnuts
- Salt and pepper to taste
Preparation
- Hard boil the eggs.
- Sauté the onions in butter or oil until lightly brown.
- In a separate pot, place the beans and cover with water.
- Cook the beans in the water until the water boils. Keep cooking until the beans are a bright green. Don’t overcook. The beans should be firm.
- Chop nuts in a blender or food processor until fine (like coarse flour)
- Blend in the cooled onions and hard boiled eggs.
- Blend in the green beans.
- Move the blended ingredients into an appropriate sized bowl.
- Add salt and pepper to taste and mix well.
- If the consistency seems off, add a bit more butter or canola oil.
